Alongside the typical varieties from the area, such as Sangiovese, Colorino, Ciliegolo, Canaiolo, and Malvasia Nero for red wines and Trebbiano, Malvasia and Vermentino for white wines; in recent years other varieties, like Chardonnay, Sauvignon, Syrah, Merlot, Cabernet Sauvignon and Cabernet Franc have been introduced.

The winemaking aims to exalt the qualities of the grapes. This purpose is achieved through strict controls on fermentation, temperature management and efficient maceration. Particular attention is paid to the ageing process in oak barrels, barriques, vats and bottle in order to properly enhance the correct maturing of the wine before being placed on the market.
